Winemaker's comments
Despite being famous for their shiraz the Bryson
family also produce an excellent Cabernet Sauvignon.
It displays the classic red berry fruits (blackberry and blackcurrant) mint and
vanilla aromas typical of the variety. Once again the reduced yield in the vineyard
enforced by the owner's high standards is
evident on the palate with the wine showing intense berry fruits,
hints of chocolate and is finely balanced with a firm tannin
structure giving a long concentrated finish. It is drinking very
well now and will cellar for 6 to 8 years.
